Scallops and passion fruit carpaccio

Glorify the scallops with sweet and sour flavour. Delicious festive dish.

For 4 people

  • 12 scallops

  • 4 passion fruits

  • 1 lemon

  • 2 tablespoon olive oil

  • 1 lime

  • black pepper

  • fleur de sel

  1. Cut the scallops in very thin and regular slices. Drop them one by one on the serving plates.

  2. Cut the passion fruit in two pieces, collect the flesh with a spoon. Sift it to eliminate the seeds.

  3. In a bowl, mix the flesh with the olive oil and 1 tablespoon squeezed lemon. Spread over the scallops with a brush. Let it macerate for 30 minutes in the fridge.

  4. To serve sprinkle lime zeste, freshly grounded black pepper and fleur de sel.
