Sardine and tomato tart

Delicious nourishing meal

For the dough (you can also use pizza dough)

  • 200 g flour

  • 100 g butter

  • 5cl water

  • 1/4 teaspoon salt

For the topping

  • 2 sardine cans in olive oil

  • 2 onions

  • 1 tablespoon olive oil

  • 3 tomatoes

  • 2 teaspoons capers

  • 1 tablespoon wholegrain mustard

  • 1 teaspoon oregano

  • 1 teaspoon thyme

  • 50 g grated cheese

  1. Mix the flour and salt in a bowl. Add the butter and mix with fingers until you get a sandy texture. Add the water and mix until forming a dough. Let it rest covered in the fridge.

  2. Preheat your oven at 180C.

  3. Peel and chop the onions. In a frying pan with 1 tablespoon olive oil, brown the onions. Reserve them.

  4. Spread out your dough in a buttered dish. Prick with a fork and spread the mustard. Cook for 5 minutes in the oven.

  5. Slice the tomatoes. Remove the bones of the sardines and cut in pieces. Spread the onions on the dough, cover with the tomato slices. Spread the capers, oregano, thyme and grated cheese.

  6. Cook in the oven for 30 minutes.

  7. Serve with a green salad on side.
