Pot-au-feu

Perfect winter dish with a fantastic broth

8 people

  • 1kg beef shin and chuck

  • 8 pieces of marrowbones

  • 2 leeks

  • 4 carrots

  • 4 potatoes

  • 4 turnips

  • 1 onion

  • 4 cloves

  • thym, laurel, parsley

  • salt and pepper

  1. Peel onion, potatoes, carrots and turnips.

  2. Wash the leeks and cut them in 4 pieces lengthwise. Cut them in 3 pieces across the width. Form 8 bundles tied up with a thread.

  3. Stick the cloves into the onion.

  4. Form a bundle with the thym, laurel and parsley tied up with a thread.

  5. Put the meat in a big pot fill in with water. Add the onion and the bundle of herbs. Cook for 2h. Add the vegetables, salt and pepper. Cook for 1h.
