Pickled cucumber

  • ¼ cucumber, thinly sliced

  • 1 teaspoon salt

  • 1 tablespoon rice vinegar

  • 1 teaspoon sugar

  • 1 shallot, thinly sliced

  • black sesame seeds (optional)

  1. Sprinkle the cucumber with salt and mix so the salt is covering all the cucumber.

  2. Leave the cucumber in a sieve over a bowl to disgorge. In a bowl, mix the vinegar with the sugar and salt.

  3. Push any excess liquid from the cucumber and with the shallot, mix with the sugar and vinegar.

  4. Check the seasoning and top with black sesame seeds.
