For around 24 mini tarts
Shortcut pastry (store-bought or homemade if you have time)
3 tomatoes
1 goat cheese log
1 tablespoon honey
1 tablespoon mustard
1 tablespoon olive oil
Grated Gruyère cheese
Fresh or dried thyme
1. Preheat your oven to 180°C (350°F).
2. Brush your tart tray with olive oil. Roll out the dough and use a glass to cut circles that fit your tray. Place the dough circles in the tray. Cover with baking paper and add weights to each tart. Bake for 5 minutes.
3. Wash and slice your tomatoes. Slice your goat cheese.
4. Take your tray out of the oven. Remove the paper and the weights. Brush with the mustard, add the grated cheese, the sliced tomato, and the goat cheese. Spoon some honey and drizzle the thyme.
5. Cook for 10 minutes or until the dough is cooked. Let it cool down before removing the tarts from the tray.
6. Eat warm or cold.
