Crème anglaise (custard)

Seb's grandmother's recipe. Very easy and so delicious.


  • 1l milk

  • 5 eggs

  • 2 tablespoons corn flour

  • 2 vanilla pods

  • 180g sugar

  1. Reserve a small glass of milk.

  2. Cut lengthwise the vanilla pod and slide inside with your thumb to extract the vanilla.

  3. Boil on low heat the rest of the milk in a pan with the sugar, the vanilla extract and pod.

  4. In a bowl, pour the egg yolks, the corn flour and the reserved milk. Beat (by hand) the mixture.

  5. Little by little pour the boiled milk in the bowl while mixing so the yolks don't cook.

  6. Put back the mixture in the pan on low heat. Mix regularly and cook until it has thicken.

  7. Pour in the serving dish and let it cool down.
