Coconut prawn curry

We have cooked this meal with friends for a new years eve dinner in London a few years ago... such a great dinner and night! Each time I eat it again I think about that time of great friendship, sharing and caring.


For 6 persons

  • 1 garlic clove

  • 1 onion

  • 1 kg uncooked prawns

  • 1 stick of lemongrass

  • handful of coriander

  • 1 carotte

  • 2 courgettes

  • 200 g bean sprouts

  • 1 tablespoon curry powder

  • 200 ml coconut milk

  • Salt

  • Pepper

  • Olive oil

  1. Peel and cut in half the prawns

  2. Peel and thinly chop the onion and the garlic clove

  3. Peel and crush the garlic clove

  4. Peel and chop the lemongrass

  5. Chop the coriander

  6. Peel and cut the carrot and the courgettes in thin sticks

  7. Heat the olive oil in a frying pan in medium heat, cook the onion and garlic for 2 minutes

  8. Add the carrot sticks, lemongrass and curry powder and cook for 2 minutes

  9. Add the courgette sticks and bean sprout and cook for 2 minutes

  10. Add the prawns and cook for 2 minutes

  11. Add the coconut milk, salt and pepper and let it cook at low heat for 10-15 minutes

  12. Serve with basmati rice and topped with the chopped coriander
