Delicious comforting lunch or dinner
For 4 persons
8 chicory
100 g blue cheese
1 tablespoon of honey
30 g butter
For the crumble
130 g flour
60 g butter
50 g walnuts
1 teaspoon thyme
black pepper
Wash the chicory. Cut lengthwise in 4 pieces each chicory.
In a big pot on low heat put the 30 g of butter and 20ml of water, add the chicory cover and cook for 30 minutes. Add the honey and cook for 15 more minutes.
Cut the butter in small pieces. Roughly chop the walnut. Mix the crumble ingredients in a bowl with hands until you get a gritty texture.
Preheat the oven at 180C.
In an oven dish, spread the chicory. Crumble the blue cheese then spread the crumble mixture.
Cook for 40 minutes.
