Cabbage and potato gratin

Comforting winter dish

For 4 people

  • 1 onion

  • 1 garlic clove

  • 1 Savoy cabbage

  • 6 potatoes

  • 150ml vegetable stock

  • 150ml liquid cream

  • 15g butter

  • 1 tablespoon olive oil

  • Salt and pepper

  1. Peel and chop the onion and garlic. Wash the cabbage and cut it in thin slices.

  2. Heat a large saucepan with the olive oil, once warm add the onion and the garlic. Cook for 5 minutes on low heat.

  3. Add the cabbage, mix, put the lid and let it cook for 5 minutes. Add the vegetable stock, put back the lid and cook for 20 minutes or until the cabbage is cooked.

  4. Meanwhile, peel the potatoes, grate them. Mix them with the butter, salt and pepper.

  5. Preheat the oven at 200C.

  6. When the cabbage is cooked add the cream, bring it back to simmer. Add salt and pepper to taste. Pour the mixture in the oven dish.

  7. Add the potato mixture on top.

  8. Cook in the oven at 200C for 30 minutes or until potatoes are cooked and browned.
